Meal planning and cooking weekly dinners can easily become overwhelming. At least I know it does for me. Especially when you’re on a budget, focusing on healthy foods, and trying to feed picky eaters. Before I go to the grocery store, I try to plan out meals for every day of the week ahead. I’ll admit it…Pinterest sucks me in! All those delicious looking meals with recipes at your fingertips! I love getting inspiration and ideas from Pinterest, as well as trying new recipes. But something that I find super helpful in planning my meals is also having a few “staple” meals that are simple, delicious, versatile, and don’t require too many ingredients. This cuts down on the time it takes to find a great recipe, write down all of the ingredients, and then hope the store has what you’re looking for when you go! Now don’t get me wrong. Fun new recipes with exotic ingredients and bold flavors definitely have their time and place….but not every night of the week for a busy mom! I thought I’d share with you one of my family’s “staple” meals that we have at least once a week. It’s requested by my kids, easy on the budget, and doesn’t require any special ingredients that you probably don’t already have in your spice cabinet right now!
I make the spice blend for my Oven Roasted Chicken Drumsticks in big batches so there’s no fuss when I’m ready to prepare dinner. Although I use skin-on drumsticks most often, this blend of simple spices is great on any cut of chicken! It’s made up of equal parts smoked paprika, sweet paprika, garlic powder, onion powder, and cumin. And of course salt and pepper to taste. I find that this combination gives a chicken the punch of flavor it needs without it being to overpowering or spicy.
What I love most about buying chicken drumsticks is that I can get a lot of them for super cheap! Even the organic, free-range, antibiotic-free drumsticks are very reasonably priced. I usually purchase mine at Trader Joes. I can get them for no more than $1.99/lb. So I always grab two packs (10-12 drumsticks total) for my family of five and pay around $6-$7. That’s a pretty good price for high quality meat in my book!
Drumsticks are a lot more appealing to kids too! I mean who wants to eat their chicken with a fork and knife?
By roasting these drumsticks in the oven the skin gets nice and crispy. And don’t be afraid of the skin! That’s where all the good fat is! While your chicken is in the oven simply prepare your favorite sides, and dinner is done! I never get too fancy with this. A side of asparagus or broccoli will do the trick!

Perfect Oven-Roasted Chicken Drumsticks
- 1 tbsp smoked paprika
- 1 tbsp sweet paprika
- 1 tbsp ground cumin
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp black pepper
- 1 1/2 tsp sea salt
- 10-12 skin-on chicken drumsticks
- 2 tbsp avocado oil or olive oil
Preheat oven to 425 degrees Fahrenheit.
Place chicken drumsticks on sheet pan and drizzle with avocado oil.
Mix all dry spices together in a bowl before sprinkling over drumsticks to ensure even distribution.
Place drumsticks in oven for 20 minutes.
Turn oven temperature down to 400 degrees Fahrenheit then continue roasting for another 30 minutes.
Remove from oven and enjoy!
The same cooking time and temperatures can be used for bone-in, skin-on chicken thighs as well.
