Chocolate-Coconut Energy Bites {Paleo, Grain-free, Gluten-free, Nut-free}

Are you a chocoholic like me? Check out my Chocolate-Coconut Energy Bites. They are not only great for kids, but for parents too! Similar to my Apple-Cinnamon Energy Bites, these decadent little treats are sure to deliver! Chocolate and coconut are one of my favorite flavor combinations, so I often find myself snacking on these.

 

 

They are simple to make and super convenient to grab on-the-go! Plus, you don’t have to feel guilty about enjoying a sweet treat!

It’s a lot of fun to play around with different flavors and this recipe is so versatile. You might try adding nuts (if there’s no concern for allergies), and dried fruit such as cranberries, banana chips, or cherries. Add ground flax or chia seeds! Try a different kind of nut butter like almond butter, cashew butter, or hazelnut spread (I’ll link some healthy alternatives to Nutella below). Go ahead and get creative! The possibilities are endless!

 

The recipe is also super forgiving! If your mixture ends up being too crumbly to roll into balls, just add some extra sunflower seed butter and a tad more honey and give it a few more pulses in the food processor. This will make it more sticky and easier to form.

Chocolate-Coconut Energy Bites {Paleo, Grain-free, Gluten-free, Nut-free}

Ingredients

  • 10-12 medjool or deglet noor dates pitted
  • 1/3 cup shredded coconut flakes
  • 1/4 cup sunflower seeds
  • 1/4 cup chocolate chips I used dairy-free, nut-free, soy-free semi sweet chocolate chips
  • 1/4 cup sunflower seed butter
  • 1 tbsp organic honey

Drizzle Topping

  • 1/4 cup coconut butter melted for drizzle
  • 1/4 cup chocolate chips melted for drizzle

Instructions

  • Place all ingredients into a food processor.
  • Process until all ingredients are finely chopped and well incorporated.
  • Roll mixture into balls (makes about 10 to 12 balls depending on size).
  • For topping, melt coconut butter and chocolate chips in separate containers in microwave. Heat in 30 second intervals, stirring in between, until consistency becomes thin enough to drizzle.
  • Drizzle melted coconut butter and chocolate over energy bites.
  • Store energy bites in an air-tight container in the refrigerator.
